It's never occurred to me that the red Swiss chard and the celery are so alike until I put them together. Then it crossed my mind the possibility of making a vegetable dish with the two of them. Since the celery stems are usually twice as long as that of the chard, I scale the portion accordingly to make the ratio of celery to chard equal to 2:1.
Recipe: Stir-fried celery and red Swiss chard (for 1)
Ingredients:
- 1 stem of celery, chopped to 1/2" long pieces
- 1 stem of red swiss chard, chopped to 1/2" long pieces
- 1 tablespoon (TB) cashew pieces
- 1 TB cooked chicken pieces
- 1 TB chipotle chili oil
- 1/4 teaspoon fresh ginger, chopped
- a few drops of fish sauce
- dash of salt
Procedure:
Heat chopped ginger in chili oil until sizzling. Add chard and let cook on med-high heat for 1-2 minutes. Add celery and chicken pieces, and mix. Let cook on med-high heat until both are a little translucent. Sprinkle fish sauce and salt, and stir well to mix for 30 seconds. Add cashew pieces, stir and serve right away.
